歐風馬鈴薯派 European Potato Pie


這道料理太受歡迎了,曾被學生取用在蘋果日報上示範,
做法簡單、口味濃郁,居家小點心或宴客菜都適宜。
This dish is so popular, that it was once demonstrated on Apple
Daily by the students. The methods are simple and flavor is
marvelous. It can be homemade as a snack or a banquet dish.

【材料】
馬鈴薯600g.(去皮切片)、培根1/2杯(切絲)、洋蔥末1杯、低筋麵粉1/2杯(過篩)、蛋3個、融化奶油3匙、雞湯粉1匙、莫茲瑞拉起司絲150g.、黑胡椒1/2匙、巴西里適量、帕瑪森起司粉3匙、無糖鮮奶油4匙

【做法】
1.馬鈴薯片放入蒸鍋蒸爛,搗成泥狀。
2.取2匙奶油放入鍋內以極小火煮至融化,加入培根絲以小火炒至呈焦黃色,接著倒入洋蔥末炒透。
3.麵粉倒入馬鈴薯泥中,加入蛋、1匙奶油、雞湯粉和70g.莫茲瑞拉起司絲、黑胡椒、鮮奶油,以及做法2.拌勻。
4.使用烤箱:做法3.放入烤皿內,移入烤箱、以上下火140~150℃烤約40分鐘取出,鋪上剩下的莫茲瑞拉起司絲和帕瑪森起司粉,烤至呈金黃色即成,最後撒上巴西里。
5.使用雙壁鍋或休閒鍋、材質好的平底鍋:取一張烤焙紙鋪在鍋內,倒入做法3.,均勻撒上剩下的莫茲瑞拉起司絲和帕瑪森起司粉,蓋上鍋蓋以小火烤約30分鐘,最後撒上巴西里。

【Ingredients】
600g potato (peeled and sliced), 1/2C bacon (shredded), 1C minced onoin,1/2C cake flour (sifted), 3 eggs, 3T melt butter, 1T chicken soup broth powder, 150g shredded mozzarella cheese, 1/2T black pepper, parsley as needed, parmesan cheese powder, 4T unsweetened whipping cream 

【Methods】
1.Steam potato slices in steamer until soft and crumbling, then mash well.
2.Melt 2T of butter in pan over low heat, add bacon and saute over low heat until yellow brown, then add minced onion and fry until done through.
3.Add flour in the mashed potato along with eggs, 1T of butter,chicken soup broth powder,70g of mozellar cheese, black pepper,whipping cream and method (2).
4.Use an oven: Place method (3) in a baking bowl, bake in oven at 140 to 150˚C on upper and lower element for about 40 minutes, remove and spread evenly with remaining mozellara cheese and parmessan cheese. Return to oven and bake until golden and remove. Sprinkle with parsley.
5.In a Durotherm, hot pan or a better quality pan: Line a sheet of parchment paper on bottom of frying pan, pour in method (3) and sprinkle evenly with remaining mozellara cheese and parmessan cheese. Cover and fry over low heat for about 30 minutes, then sprinkle with parsley. Ready to seve.
