越式涼拌沙拉 Vietnamese Cold Salad



越南風味的涼拌青木瓜,
清爽滋味有別於常見的泰式木瓜沙拉,風味相當有層次喔!


【材料】
草蝦8隻、雞胸肉200g.、青木瓜200g.(切絲)、碎花生3匙、九層塔適量、薄荷葉10片、紅蔥頭3粒(切絲)

【淋醬】
白砂糖2匙、魚露2又1/2匙、蒜末1又1/2匙、紅辣椒末1匙、檸檬汁2匙

【做法】
1.草蝦去腸泥,放入鍋中汆燙或電鍋蒸熟(使用雙壁鍋不需放水:蓋上鍋蓋以中小火煮至冒煙,轉小火續煮約3分鐘)。待涼後去殼,背部劃開成兩片蝦。
2.雞胸肉放入電鍋蒸熟或以滾水煮熟(使用雙壁鍋:先加入3匙水,蓋上鍋蓋以中小火煮至冒煙,轉小火續煮約6分鐘),取出待涼,切絲。
3.製作淋醬:白砂糖加入4匙溫水拌勻,待涼後再與其他材料拌勻即成。
4.將青木瓜絲鋪於盤中,鋪上雞絲,上層再放蝦肉,撒上碎花生和紅蔥頭絲,最上面放九層塔和薄荷葉,淋上淋醬即可享用。

2T white granulated sugar, 2 1/2T fish sauce, 1 1/2T minced garlic, 1T minced red chili pepper, 2T lemon juice

【Methods】
1.Blanch shrimp in pan or steam until done in a rice cooker (in a Durotherm no liquid Durotherm: Cover and cook over medium low until smoking, redue heat to low and continue cooking for about 3 minutes). Let rest until cool and remove the shrimp shells, then halve the shrimp along the back.
2.Steam chicken breast in rice cooker until done, or cook in boiling water until done (in a Durotherm: Add 3T of water, reduce heat to low, continue cooking for about 6 minutes).Remove and rest until cool, then shredded.
3.To prepare sauce: Combine white granulated sugar and 4 spoonfuls of warm water well, wait until cool and mix well with the rest of the ingredients.
4.Line shredded papaya at the bottom of the plate, then top with shredded chicken breast, then shrimp meat.Sprinkle with chopped peanut and shallots. Place basil leaves and mint leaves on top. Drizzle with dressing and serve.

【Tips for a Perfect Dish】
1.Use fresh herb leaves in this recipe.This dish is still good without mint, but basil is a must.
