黃金鮮蝦飯
這道美味料理非常討喜,
是過年過節時餐桌上不可缺少的一道美食,
不僅可宴客,也適合做成郊遊的美味便當喔!
【材料】
鮮蝦300g.、米2杯、高湯2杯、蒜末1匙、洋蔥末2匙、鬱金香粉1/2匙、巴西里少許
【做法】
1.蝦去頭及殼留尾巴,由背部劃一下去腸泥。
2.中火熱鍋,倒入1又1/2~2匙橄欖油,油熱後(油紋產生)放入蝦煎熟取出。
3.原鍋放入蒜末、洋蔥末炒香,倒入洗淨的米拌炒約1分鐘,加入鬱金香粉轉中小火炒勻,倒入高湯蓋上鍋蓋,煮約30分鐘或移入電鍋(雙壁鍋倒入高湯,蓋上鍋蓋至冒煙,轉小火續煮約6分鐘,移入外鍋燜6分鐘即成)。
4.將鍋蓋打開鋪上煎熟的蝦子、撒上巴西里即可享用。

【Ingredients】
300g fresh shrimp, 2C rice, 2C soup broth, 1T minced garlic, 2T minced onion, 1/2T turmeric powder, parsley as needed
【Methods】
1.Remove heads from shrimp and retain the tails, devein and rinse well.
2.Heat pan over medium, add 1 1/2~2T of cooking oil until smoking, fry shrimp until done and remove.
3.Use the remaining oil to stir-fry minced garlic and onion until fragrant, then add rinsed rice and stir for about 1 minute. Add turmeric powder and reduce heat medium low, cook until evenly done and pour in soup broth. Cover and continue cooking for about 30 minutes, then remove the rice cooker (in a doublewall
pan: Pour in soup broth and cover until steam comes out, reduce heat to low and continue cooking for 6 minutes. Remove and simmer for 6 minutes).
4. Remove the top and spread evenly with shrimp, sprinkle with parsley and serve.
【Tips for a Perfect Dish】
The rice has to be cooked until ivory white, then add the rest of the ingredients. This extra step helps make the rice more tasty.
