酸甜口味又帶有梅香的下飯菜-梅子蒸小排上菜囉_《最想學會的家常菜》


梅子蒸小排
Steamed Spareribs with Plums

這是一道帶有梅香,酸甜口味的下飯菜。尤其在天氣炎熱時,更能促進食慾,白飯一碗又一碗。This sweet-and-sour dish with plum flavor goes well with rice. It can definitely stimulate your appetite in the hot weather and make you unknowingly eat several bowls of rice.

材料
小排600克、蔥花1大匙、太白粉2大匙、紅辣椒末1大匙

醃肉料
梅子10顆(去籽剁碎)、梅子汁1大匙、醬油11/2大匙、醬油膏11/2大匙、米酒1大匙、白胡椒粉少許、香油1大匙、蕃茄醬11/2大匙、蒜末1大匙、蔥末1大匙

做法
1. 小排剁小塊;梅子去籽剁碎。
2. 小排放入醃肉料中醃約1小時,放入太白粉拌勻。
3. 將醃好的小排放入蒸籠(水滾了)蒸50~60分鐘,撒上蔥花和紅辣椒末即可食用。

這樣做更省時
如果使用壓力鍋蒸煮,可在鍋內放1,000c.c.的水,將小排放入淺蒸盤扣入壓力鍋內,蓋上鍋蓋,加熱後待上升兩條紅線,再改小火蒸約18分鐘,撒上蔥花即可。


Ingredients
600g spareribs, 1T finely chopped green onions, 2T tapioca starch,1T minced red chillies

Marinade
10 plums(chopped, seedless), 1T plum juice, 11/2T soy sauce, 11/2T soy sauce paste, 1T rice cooking wine, white pepper as needed, 1T sesame oil, 11/2T ketchup, 1T minced garlic, 1T finely chopped green onions

Directions
1. Cut the spareribs into small pieces. Pit and chop the plums.
2. Marinate the spareribs for an hour and mix them with tapioca starch.
3. Place the marinated spareribs into a steamer over boiling water for 50 to 60 minutes. Sprinkle with finely chopped green onions and red chillies Serve.

Time-saving method
If you happen to have a Duromatic, add 1,000 c.c. of water to the cooker. Place the ribs on a shallow steam tray and put it into the cooker. Lock the lid. When the steam begins to hiss out of the cooker and two red bars are visible, reduce the heat to low. Cook for about 18 minutes. Sprinkle with the shredded green onions. Serve.

烹調秘訣
我習慣用自己醃的梅子來做,一般店家也有賣玻璃瓶裝的,不過並非梅子蜜餞。尤其每年四月梅子盛產,許多人都會大量醃製,梅子汁千萬別浪費了。
I like to use the homemade preserved plum juice. You can find glass-bottled juice in grocery stores, but they are not made from preserved plums. Plums are at the peak of season in every April, many people will preserve lots of them at that time. Don’t waste the plum juice.
