材料
長約12 ∼ 14 公分的肋排1,000 克、蔥2 支、紅辣椒1 條、洋蔥1/3 個、大蒜3 粒、昆布1 片
Ingredients
1000g approximately 12 ∼ 14cm long ribs,2 scallion, 1 red chili pepper, 1/3 onion, 3garlic, 1 Kombu seaweed
醃料
醬油2 1/2 大匙、柴魚醬油1 大匙、味醂1 大匙、薑泥1 大匙、蔥末2 大匙
Marinade
2 1/2T soy sauce, 1T bonito flavored soy sauce, 1T mirin, 1T mashed ginger, 2T minced scallion
烤料
味噌1 1/2 大匙、醬油1 大匙、味醂2 大匙、檸檬汁1 大匙、蔥末1 大匙、蒜末1 大匙、香油1 大匙、細砂糖1 小匙
Barbecue Sauce
1 1/2T miso paste, 1T soy sauce, 2 mirin,1T lemon juice, 1T minced scallion, 1T minced garlic, 1T sesame oil, 1t fine granulated sugar
做法
1. 蔥、紅辣椒和洋蔥都切絲;大蒜切片;烤料拌勻。
2. 肋排放入醃料中,放置1 小時後倒入鍋中,加入洋蔥、昆布和大蒜蒸1 小時。
3. 取出蒸好的肋排,塗抹烤料後放入鍋內煎烤至焦黃(也可移入烤箱中,以上下火230℃烤至上色),取出放在盤中。
4. 將蔥、紅辣椒放入冰水中冰鎮約10 分鐘,取出瀝乾水分,撒在肋排上即可。
Methods
1. Shred scallion, red chili pepper and onionfinely. Slice garlic. Barbecue sauce mix well.
2. Marinate ribs in marinade for 1 hour, then place in pan along with onion, Kombu, and garlic added, steam for 1 hour.
3. Remove ribs, spread with barbecue sauce and fry in pan until brown. (Or place in oven and bake with upper or lower element at 230℃ until brown.) Remove to a serving bowl.
4. Soak scallion and red chili pepper in ice water about 10 minutes. Remove and drain, spread evenly over a serving plate, place ribs on top. Serve.
