泰國涼拌河粉
清爽的涼拌口味可當主菜也可當下飯菜,
是CC在泰國時愛吃的料理之一。
This light clear, cold mixed dish can be used as main course
to help your appetite. This is CC’s favorite dish in Thailand.
【材料】
泰國河粉1/2包、絞肉300g.、蝦米3匙、鳳梨1/4個(切片)、蒜末2匙、洋蔥末1/2杯、紅辣椒末2
匙、香菜末6匙、芹菜末3匙、紅蔥頭3粒(切片)、碎花生1/4杯、泰國辣椒粉適量(依個人喜愛辣
度)、鮮蝦200g.(去腸泥)、白砂糖適量、檸檬1個(切8瓣)

【調味料】
魚露2匙、檸檬汁1又1/2匙、酸子汁1匙、椰子糖1匙
【做法】
1.中火熱鍋,放入3又1/2匙油(雙壁鍋、休閒鍋或材質好的不沾鍋2匙油),油熱後放入蒜末炒
香、續入洋蔥末、紅辣椒末及3匙香菜末炒約2分鐘,倒入切碎的蝦米炒約3分鐘,再加入絞
肉炒約10分鐘(材質好的鍋6分鐘)。調味料拌勻,放入拌炒均勻。
2.河粉放入沸水中煮熟,取出放盤中,鮮蝦煮熟取出去殼。
3.將做法1.放在河粉上,鋪上鮮蝦、撒上芹菜末、紅蔥頭,盤邊放上鳳梨,並附上碎花生、
辣椒粉、白砂糖和檸檬角。

【完美烹調寶典Tips for a Perfect Dish】
1.如無酸子汁可以檸檬取代,無椰子糖以白砂糖取代,鳳梨可以罐頭取代。
2.花生以選用無鹽原味為佳,自己絞碎較香(帶顆粒口感較好)。
3.也可用牛絞肉或雞絞肉取代。

【Ingredients】
1/2 pack Thai Pho, 300g ground pork, 3T dried miniamature shrimp, 1/4pineapple (finely-chopped), 2T minced garlic, 1/2C minced garlic, 2T minced red chili pepper, 6T minced cilantro, 3T minced celery, 3 shallots (sliced), 1/4C chopped peanut, Thai chili powder as desired, 200g fresh shrimp, white granulated sugar as needed, 1 lemon (cut into 8 equal wedges)
【Seasonings】
2T fish sauce, 1 1/2 lemon juice, 1T tamarind ,1T coconut sugar
【Methods】
1.Heat pan on medium, add 3 1/2T of cooking oil (2T of cooking for a Durotherm or good quality frying
pan) and heat until smoking, stirfry minced garlic until fragrant, add minced onion, red chili pepper and
3T of minced cilantro, then saute for 2 minutes. Add chopped dried shrimp and stir for about 3 minutes,
then add ground pork about 10 minutes (6 minutes for a good quality pan). Combine the seasonings and
mix well with the pork.
2.Cook noodles in boiling water until done, remove to a serving plate. Cook fresh shrimp until done,
remove and discard the shells.
3.Top method (1) over the pho, spread evenly with fresh shrimp, sprinkle with minced celery and shallot, then garnish with pineapple on the side. Serve with chopped peanut, chili powder, white granulated sugar and lemon wedges as a dip.
【Tips for a Perfect Dish】
1.If tamarind juice is not available, use lemon. Use white granulated sugar if coconut sugar is not available.
Canned pineapple may be used if fresh is not availabe.
2.Use unsalted plain peanuts in this dish, crush it yourself (A coarse texture for the ground peanut is
better).
3.Ground beef or ground chicken may be used instead of pork.
